Thai Coconut Soup

When it's FREEZING outside, you aren't feeling well or you're just in the mood for some good SOUP - this is a GREAT go-to! It's also Whole30 approved, so you can enjoy this yummy bowl no matter what plan you're following.

Takes about 30 minutes total to make and cook, so it's also great if you're in a hurry or you don't want to stand at the stove for hours cooking!

It's versatile so you can add in pretty much whatever you want! The broth is a wonderful base and it's GREAT with or without meat (I prefer without).

If you want more spice you can add in more jalapeno!
Great seafood addition options - shrimp, scallops, or a firm white fish
Need more greens? Add a bag of baby spinach or zucchini noodles right when you serve
If you can't find the lemongrass at your local store, just more ginger and lime zest in the broth
