Spicy Sriracha Vegetable Lomein

This one was another SUPER yummy recipe that we really enjoyed, but DISCLAIMER - IT'S SPICY. Like woah. So, if you don't like a lot of heat, tone down the red pepper flakes and the amount of sriracha you use. It's sure to be a winner!

Spicy Sriracha Vegetable Lo Mein

Serves 4

1 (16oz) package of lo mein noodles
2 tbsp EVOO
2 zucchini, cut into moon shapes
3 cloves garlic, minced
1/2 tsp crushed red pepper flakes
1 tbsp butter
2 large eggs, beaten
1 tbsp brown sugar
2 1/2 tbsp lite soy sauce (low/no sodium is best)
2 tbsp sriracha hot sauce
1 tbsp minced ginger
3 green onions, sliced thin

- Begin a large pot of salted water to boil. Once it reaches a full boil, add the noodles and cook according to package directions (about 4-5 minutes).
- Prepare the spicy sriracha sauce. In a small bowl stir together the brown sugar, soy sauce, sriracha, ginger and EVOO.
- In a large skillet melt 1tbsp of butter over medium-low heat. Add the crushed red pepper to the butter and whisk in the eggs. Stir gently and cook for about 2 minutes. Once the eggs are done cooking, remove from the skillet. Add more EVOO and turn the heat to medium-high. Add the chopped zucchini and stir-fry until just charred; about 3 minutes. Stir in garlic and cook for one minute.
- Add drained noodles to the skillet along with the cooked egg and prepared sauce. Turn the heat to medium-low and stir until everything is coated well with sauce. Sprinkle sliced green onions and serve immediately!
- Enjoy!
