Carrot, Sweet Potato and Pumpkin Muffins!

Another huge hit in this house and so many of you requested the recipe! So, here you go! My one year old went crazy for these and my SUPER picky 3 year old even tried one.. huge victory! Approved by the husband as well, so this is a good one for everyone to try! Enjoy!

Recipe from: Payton Peoples
Makes one dozen mini muffins

1 teaspoon baking powder
1 cup flour
1/2c brown sugar
1/3c grated sweet potato
1/3c grated carrot
3/4c pureed pumpkin
2 eggs, lightly beaten
1/4c oil

- Preheat oven to 350*
- Sift flour and baking powder into a bowl
- Add sugar, eggs, grated veggies, pumpkin and oil. Combine well.
- Spoon mixture into greased mini-muffin tin and bake for 15-20 minutes.
- Remove from tin and place on cooling rack.
- Enjoy!
