Thai Ginger Coconut Soup

This was a HIGHLY requested recipe from everyone on my Facebook! I discovered this amazingness not too long ago and it's a 5 star dinner recipe around here. My favorite Thai restaurant serves the BEST coconut soup so I was hesitant to try this because there's some stiff competition out there! But, I was VERY pleasantly surprised. It's super easy and quick and YUMMY. Those make for a winner around here.

Thai Ginger Coconut Soup
Recipe from: Payton Peoples
Serves 4

1tbsp olive oil
1 medium carrot, sliced thin
1 medium red pepper, sliced thin
1c mushrooms, sliced
1 carton (32oz) Swanson Thai Ginger Flavor Infused Broth
2c shredded cooked chicken breast
1 can (14oz) coconut milk
2tbsp lime juice
2tbsp fresh cilantro

Heat oil in pot over medium-high heat. Add carrot and red pepper, cook until tender-crisp. Stir in mushrooms. 

Add broth to pot and reduce heat to medium-low. Stir in cooked chicken (I boil my chicken in water with basil, garlic and ginger then shred once fully cooked) and cook for five minutes.

Stir in coconut milk and cook until mixture is hot and bubbling. Stir in lime juice.

Serve in bowls and top with fresh cilantro. Enjoy!
