Easy Chicken Piccata

Chicken Piccata is one of my favorite meals, but it always seemed like a daunting recipe with a lot of steps, so I never tried to make it at home. Until tonight!

I found an easy recipe that was gluten free {that way little mama could eat it too!} but adapted it and made it a little more me. It turned out AMAZING. I will definitely be making this again.

I decided to add thin spaghetti noodles in the dish and served with steamed broccoli on top. Seriously incredible. The spaghetti is completely optional, or you could use a gluten free noodle. Feel free to leave it out completely if you wish.

The whole family really loved this one and it will definitely become a staple in my recipe rotation. Only thing I noted for next time as a time saver is to buy the organic thin sliced chicken breasts {Kroger carries them - Simple Truth brand} and that eliminates almost all of step two!
