Homemade Tomato Soup


After making this homemade tomato soup recipe, I will never understand how people can enjoy or even stand to eat canned soups! This was INCREDIBLE. So much flavor, so dang easy to make and the whole family loved it.
In the time it would have taken me to open a can and heat it up on the stove, I was able to make this homemade tomato soup from scratch and it was 10000x better than anything else I've ever had. I'll say this much... I don't like tomatoes (yes, I like tomato products - salsa, ketchup, etc) but this soup... YUM. We will definitely make it again. Yes, even our two year old daughter enjoyed this tonight!
Here's what you need ::

2 tablespoons olive oil
1tbsp garlic, minced
1 large yellow onion, chopped
2 (28 oz) cans peeled organic tomatoes
1 cup chicken stock (or vegetable stock)
2 tablespoons sugar
1/2 cup half and half
8 large fresh basil leaves, roughly chopped
1/2 teaspoon Italian seasoning
kosher salt and freshly ground black pepper, to taste

Here's what you do ::

In a heavy bottomed pot (or dutch oven), heat olive oil over medium-high heat. Add garlic and saute for 30 seconds – until fragrant. Add onion and cook, stirring as needed, until translucent – about 5 minutes.
Add peeled tomatoes (with juice), chicken stock, and sugar. Bring to a low simmer. Cook uncovered, for 10-12 minutes or until it has thickened.
Add the half and half, basil, oregano and season to taste with salt and pepper.
Using an immersion blender (or carefully transfer soup to a blender), puree soup until there are no large chunks left.
Serve with parmesan cheese, french bread or croutons. This would also be fantastic in a bread bowl!
