*NEW* Homemade Dinner Ideas

I'm so excited about getting into a better meal/eating plan {note - NOT a diet or a fad.. a plan that will be laid out into our every day lives forever} but one of my downfalls in the past is getting stuck in a rut of "what are we going to eat!?" or "we constantly eat the same meals!" I want to make sure I'm sticking to the staples of grilled meats and veggies but offering them in different ways so my tastebuds don't get sick of the same thing all the time!

Here are some of my ideas so far! I'm planning on using these eight meals and splitting them up over the three weeks I will be in my 21 Dy Fix rounds. That way some days I can have a quick/easy salad for dinner and other days it's more of a treat because it's a nice, comforting meal {but still healthy!} This whole lifestyle is a mind game! You have to trick your brain into thinking you're getting all those yummy cheats you've been used to for so long.

- Lemon grilled chicken topped with diced granny smith apples OR diced cucumbers. Served with brown rice and cranberries with a lemon olive oil vinaigrette

- Chicken with portobello mushrooms & onions topped with a red wine sauce and parmesan cheese. Served over a bed of sautéed zucchini, red peppers, onions and a side of roasted potatoes

- Margarita grilled chicken with fresh pico and citrus chili brown rice and black beans. Top with fresh lime juice.

- Grilled Chicken topped with goat cheese and sun-dried tomatoes and fresh basil. Drizzle a lemon EVOO sauce over it and the side of sautéed veggies (or serve with a side of whole grain pasta and homemade marinara sauce)

- Marsala grilled chicken (or pork chop) topped with mushrooms and marsala wine sauce. Served with a side of broccoli.

- Grilled chicken with white wine EVOO and balsamic sauce with goat cheese and raspberries. Served with a side of green beans or broccoli.

- Black Bean Soup served with fresh pico

- Vegetable Soup served with a side salad and homemade vinaigrette

{chicken could be substituted for fish or pork - I personally don't eat seafood so I eat a lot of chicken!}

No recipes for these yet because I'm making them up! Inspired by dishes from restaurants (like those pictured above) but I'll have to recreate them myself without all the added salt and butter than restaurants dump on food! PLUS we will be saving MAJOR mula by recreating these dishes at home.

I'm excited to get in the kitchen and start cooking! Stay tuned for recipes and meal plans to help make 2015 YOUR YEAR.
